OUR STORY

Chef/Owner Frank Kos was introduced to the kitchen at a young age, and soon developed a passion and dedication that pushed him out of his comfort zone, to grow and learn. After moving from Spokane, WA to Costa Mesa, CA and completing culinary school, he sought out the best kitchens to work in to hone his skills. As a business-minded chef, he opened his own catering and prepared meal service in Los Angeles, Orange County and Riverside County, California. Due to unforeseen events, Frank found himself on the East Coast, nonetheless passionate for quality food and excellent service. After working in Manhattan, Brooklyn and Governor's Island for a total of three years, Frank has made his way back to the Southern California area with the stoves fired up and ready to serve you!

FROM THE BEGINNING

     Frank was always one to experiment and push the boundaries. The analytical mind of an engineer led him to learn through experience, even if it was the hard way. With this mindset in the kitchen, Frank's style has always been familiar, yet something new and enjoyable. Recreating lasting memories through revitalized classics is what we strive for.


     Frank's culinary background heavily influences our food operation. He worked his way up the ranks of a fine-dining French Kitchen, solidifying classical French cooking techniques. In his own pursuit, Frank's love for Southeast Asian food led him to explore the multitude of cuisines from that area of the world. Some of his personal favorites are Vietnamese, Filipino, and Thai. He also enjoys Japanese and Chinese cuisines as well. 


     Frank's passion for food has led him to explore many other worldly cuisines. If he stumbles across one he's unfamiliar with, then he explores the new possibilities! We have adapted this philosophy in our approach with our clients here at Fly High Meals. Let us know what your heart...and stomach desire!

     Coming from high-end/ fine-dining restaurants - Marche Moderne and Alinea, to name a few, Frank learned early on that quality over quantity is always better. We will never take shortcuts or do anything to sacrifice the best experience possible.


     We take the upmost pride in our food and service, and we won't settle until you are completely satisfied. We make it a point to listen to your feedback so we can constantly improve on what we're doing.
